This year marks the 44-year anniversary of La Fiesta Restaurant & Cantina in Waco.
The original La Fiesta was opened by Sam Castillo, Sr. in downtown Waco at 18th and Washington Avenue. The genes were handed down to him by his father, A.P. Castillo, Sr. who opened “Tony’s Aztec Café” in downtown Waco in 1935—advertising “original Mexican dishes” to a community not very familiar with true Mexican cuisine.
Today, Sam Castillo, Jr. and his sister, Vicki (and their children) continue the tradition of their father and grandfather. Four generations, original family recipes, and we’re still going strong!
